Zucchini Bread with White Chocolate and Pecans

This is a great tasting zucchini bread recipe that forms this thin sweet crispy crust on top. It was given to me by my mother-in-law who was from South Dakota. She is no longer with us but her recipe still remains one of my favorites.
INGREDIENTS:
- 3 c. grated zucchini
- 3 c. sugar
- 1 c. vegetable oil
- 4 eggs
- 3 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. soda
- 1 1/2 tsp. cinnamon
- 1 c. white chocolate chips
- 1 c. chopped pecans
Heat oven to 300*.
Mix zucchini, sugar, oil and eggs. Beat until blended. Mix together flour, baking powder, salt, soda and cinnamon. Add to zucchini mixture stirring just until blended. Stir in chips and pecans. Pour into 2 greased and floured large loaf pans and bake for 1 1/4 hours.
