VEGETABLE SOUP

This soup was really good. I had some leftover pork chops we had grilled the night before so I thought, why not? I also used leftover purple hull peas but any bean would be good.
INGREDIENTS:
- 1-2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1/2 cup red pepper, chopped
- 1 celery stalk, chopped
- 1 tsp paprika
- 1/2 tsp Italian seasoning
- Red pepper flakes
- Salt and pepper
- 1 bay leaf
- 4 carrots, bite size pieces
- 2 potatoes, peeled and cut in bite size pieces
- 5 1/2 cups beef stock
- 1 can whole tomatoes
- 1 can of beans, your choice
- 1 cup of frozen corn
- 1-2 cups pork, or meat of your choice (cooked)
Saute onion, garlic, red pepper, celery, paprika, Italian seasoning, pepper flakes, salt, pepper and bay leaf until softened. Add carrots, potatoes, tomatoes and beef broth. Simmer until vegetables are tender 15-20 minutes. Add beans, corn and pork. Simmer 10 minutes longer.
