SUCCOTASH CHOWDER

INGREDIENTS:
- 3 tbsp butter
- 2 tbsp extra virgin olive oil
- 2 med. celery stalks, chopped
- 1 med. onion, chopped
- 1/2 cup green pepper, diced
- 2 cloves garlic, minced
- 1/2 cup flour
- 3 1/2 cup chicken broth
- 1 can petite diced tomatoes
- 1 can corn, undrained
- 1 can lima beans, undrained
- 1 bay leaf
- 1 can 2% evaporated milk
- 1/2 cup half & half
- 1 tbsp chopped parsley
- salt and pepper
Saute onion, celery, green pepper and garlic in melted butter and olive oil until tender. Stir in flour and cook 1-2 minutes. Slowly add in chicken broth and cook stirring frequently until thickened. Add tomatoes, corn, lima beans, bay leaf, evaporated milk and half & half. Cook over medium-low heat stirring occasionally until reduced and thickened. Season with salt and pepper to taste.
