STUFFED JALAPENOS

Stuffed Jalapenos

These Stuffed Jalapenos are just the bomb. I saw them on my new BFF's blog Pioneer Woman Cooks. (As soon as I meet her we will be anyway, I just know it.)

I kept thinking I needed to spoof up the filling but decided to leave it, and boy am I glad I did. Easy, Easy.

They are delicious just eaten as an appetizer or, we actually topped our Turkey Burgers with them. OMG,,,,they were fabulous.

Note: If you use the turkey burger recipe from the link above, just leave out the feta and milk. I also like to add an egg (slightly beaten) because it gives the burgers a great outside crust when you cook them. It is a little hard to get the egg mixed in and get the patties formed (use hands), and somewhat disgusting really, but way worth it.

Here's all you do:

INGREDIENTS:

  • 10-12 Jalapenos
  • 1 8oz. cream cheese, room temperature
  • Peppered Bacon (I used maple peppered bacon, yum)

Heat oven to 375*.

Cut the jalapenos in half, using gloves if your hands are sensitive to them, and with a small spoon clean out the seeds and the membrane. If you want them really hot, leave some in.

Fill up each jalapeno half with cream cheese. Cut the bacon slices into thirds and just wrap one section of bacon around the filled jalapeno and secure with a toothpick.

Place them on a wire rack placed on a baking sheet and cook for about 20 minutes. If your bacon isn't as crisp as you want place it under the broiler for a few.

Here's how we ate them: Turkey Burger with 2 Stuffed Jalapenos,
slice of onion, dill pickle slices and Creamy Chipotle Spread
served on a toasted bun (dill pickle and spread not shown).

They really were so very good. Just talking about them makes me want-em again.
