Roasted Tomato Blue Cheese Soup




Soups, stews and chowders can be a great "go-to" one pot lunch or dinner. I enjoy them all year long.

They're easy to make and easy clean-up. Great for cleaning out leftovers in the fridge.

I usually enjoy them with just a nice chunk of crusty bread or some homemade croutons, but if your wanting something a little heavier, just throw together a panini or a grilled open face pimento cheese sandwich. Yum!

I've never tried one of the cold soups. It's just never sounded that appealing. I guess I need to broaden my horizons. But, until then, here are some of my favorites!
