ROASTED ROSEMARY POTATOES



Leah and Carson with their bounty of potatoes. My sister Leah sent me this photo of the Yukon Gold potatoes she picked from her garden today (6/11). How nice do those look!

Leah lives in Lonsdale, Ar with her husband Roy and 2 boys Colton and Carson (Carson is in the photo with her). I can't wait to get my hands on some of them, lol.

This recipe for Roasted Rosemary Potatoes is so simple, delicious and worthy of entertaining guest. A great addition to almost any meal.



INGREDIENTS:

  • 4-5 large potatoes cut into chunks
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp chopped fresh rosemary

Heat oven to 450*

Toss all ingredients together and pour onto a prepared cookie sheet. I like to line mine with non-stick aluminum foil which I place in the oven while it's heating up. It seems to help them not stick.

Roast for 30 minutes or until brown.
