PURPLE HULL PEAS

I got a huge bag of purple hull peas from my mom, "Griffin Farms", this morning and spent 2 1/2 hours shelling peas. I can't tell you how glad I was to see the bottom of the bag but eating them tonight at supper, well, I've got to say made it all worth while. Very simple recipe, delicious taste.
Cook 3 slices of chopped bacon in a saucepan until almost crisp. Remove from pan with a slotted spoon and set aside. Saute 1/2 onion, choppped fine, and 2 cloves of garlic, minced, in bacon drippings until softened with salt and pepper. Add peas and enough water to just cover along with a small bay leaf and some thyme. Bring to a boil and simmer covered for apprx. 1 1/2 hours checking after 1 hour to add more water if necessary. I also add back in the bacon at this time.
I served these with a sirloin roast with mushroom gravy and brown rice. Very Good!
