PEPERONATA


I love peperonata. It's great served with so many things and very fast and easy to make. It's really good served on a warm sandwich with melted cheese.

INGREDIENTS:

  • 3 tbsp olive oil
  • 1 large onion, thinly sliced
  • 1 each red, orange and yellow pepper, thinly sliced
  • 4 cloves garlic, minced
  • salt and pepper
  • 2 peeled, seeded and chopped tomatoes
  • drizzle of lemon juice and balsamic vinegar

Saute onion, peppers, garlic, salt and pepper in a large skillet. Cook until softened; add tomatoes and continue to cook 4-5 minutes. Add lemon juice and vinegar.

Serve warm or at room temperature.
