PECAN CRUSTED SALMON

This fish is crispy on the outside, tender and flaky on the inside.
Make extra and use left overs to make a great salad.

INGREDIENTS:

  • 2 salmon filets
  • 1 cup milk
  • 1/2 cup pecans, chopped finely
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1 tsp Old Bay seasoning
  • 1 tsp pepper
  • 1 tbsp olive oil

Place filets in a bag or bowl with 1 cup milk. Let sit for 10 minutes then drain.

Mix pecans, flour, sugar, seasoning, and pepper. Coat filets with mixture and gently press in. Brown in olive oil on stove then bake in greased glass pan. 400* 8-10 minutes.
