PASTA with PESTO & SUNDRIED TOMATOES



This pasta is made with a very simple sauce and is full of flavor. It takes very little time to make but looks and tastes impressive.


INGREDIENTS:

  • 1 lb of spaghetti
  • 1 med. onion, chopped
  • 1/2 cup red pepper, chopped
  • 3 cloves garlic, minced
  • red pepper flakes, if desired
  • 1/4 c. pesto
  • 4 oz sundried tomatoes, drained & chopped
  • juice of 1/2 lemon
  • 1/3 c. parmesan cheese
  • salt and pepper
  • Fresh Basil

Cook spaghetti in salted boiling water until al dente, save at least 1 cup of pasta water.

Saute onion, red pepper, garlic and pepper flakes if using in 1 tbsp of olive oil until translucent and softened. Add pesto, sundried tomatoes and lemon juice. Cook 2 minutes then add parmesan stirring well. Check for seasoning then add salt & pepper to taste. Add cooked pasta and a handful of fresh basil torn or chiffonade. Use reserved pasta water a little at a time to loosen sauce to desired consistency.

To serve: Top with shaved parmesan and more fresh basil.
