LOW FAT BANANA MUFFINS
INGREDIENTS:
- 1 cup whole grain flour
- 1/2 cup white flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1/2 cup sugar
- 1 cup mashed bananas, 3-4 medium
- 2 egg whites
- 1/4 cup applesauce
- 1 tsp vanilla extract
Combine sugar, bananas, egg whites, applesauce and vanilla. Add dry ingredients and mix together until combined. Fill 12 muffin cups equally. Bake at 350* for 18-20 minutes. Add nuts, chocolate chips or fruit if desired.
