KEYLIME PIE ICE CREAM

"Keylime Pie Ice Cream", it doesn't get much better than that, especially in the summer when it's as hot as it has been lately.I adapted this recipe from another blog that I like to follow called "The Hungry Housewife". At first I didn't know if I would like the chocolate in it, but it works. Loved the graham crackers. I served it with Pina Colada Cookies, which are one of my very favorites. The flavors of the ice cream and cookies were perfect together.
INGREDIENTS:
- 1 1/2 cups whole milk
- 1/2 cup key lime juice
- 1/2 cup heavy cream
- 1 14 oz can of Eagle Brand sweetened condensed milk
- Pinch of salt
- Zest of 2 limes
- 3 oz semi-sweet chocolate (like ghirardelli), chopped
- 4 sheets plain or honey graham crackers
In a large bowl, stir together the milk, key lime juice, heavy cream, condensed milk and salt. Cover and place in the fridge for 2 hours or until the mixture is cold.
Pour into your ice cream maker and make according to your ice cream makers directions. Minutes before the ice cream is done add the lime zest, chocolate and graham crackers.
Remove from your ice cream makers bowl and place in a freezer safe container until firm. Serves 6.
Notes: This recipe completely fills a 1 1/2 quart ice cream maker while churning, especially when you add the chocolate chips and graham crackers.
