ICE CREAM CAKE

This Ice Cream Cake was great. I made it for my grand-daughter Kasidee, who just turned 4.
We decided to just have cake and ice cream for her party, so since Chelsea, my daughter/her mommy, was going to make her a Dora cake, which I gotta say, turned out so aDORAble (hehe, i had to), I decided to do something a little different for the ice cream and came up with this recipe. It is super easy to make with huge "WOW" factor. Big hit with everyone there. My nephew even requested his mom make it for his birthday that was coming up.

For the middle I used Breyers ice cream and Hershey's Special Dark Chocolate Hot Fudge. It was great.
Here's the recipe:
INGREDIENTS:
- 10 to 12 Swiss cake rolls
- 2 pints vanilla ice cream, softened
- 3/4 cup hot fudge ice cream topping
- 20 chocolate creme filled chocolate wafer cookies (Walmart brand works great)
- 2 pints chocolate ice cream, softened
Line a 2-qt. bowl with plastic wrap.
Cut each cake roll into eight slices; place in prepared bowl, completely covering the bottom and sides. Cover and freeze for at least 20 minutes or until cake is firm.
Spread vanilla ice cream over cake. Cover and freeze for at least 1 hour.
Heat hot fudge topping in microwave to loosen and stir together with cookies that have been crushed (I think I just used the entire jar of the fudge). Spread fudge and cookie crumble over vanilla ice cream. Freeze for at least 1 hour.
Spread with chocolate ice cream. Cover and freeze for up to 2 months.
Just before serving, remove from the freezer and invert onto a serving plate. Remove bowl and plastic wrap. Cut into wedges.
12-14 servings.
NOTE: I put the swiss rolls in the freezer for a few minutes and used a serrated knife for easier slicing.
