GRILLED CHIPOTLE STEAK and ONION HOAGIE

I created this "Grilled Chipotle Steak and Onion Hoagie" recipe to enter into a contest. Even though I didn't win, I'm glad I tried, because I can't imagine not having this recipe.It turned out so delicious. Marinating the steak in the beer and chipotle makes it really tender and full of flavor. I like to serve it with Garlic Lime Mayo, but have also served it with Creamy Chipotle Spread and it was just as good. I've eaten it with a "simply dressed cole slaw" added. It was yummy! Loved the addition of the slighly sweet tartness and the added texture of the crunch of the cabbage. To make the slaw: Put a little red wine vinegar in a small bowl; add a drizzle of honey, salt, pepper, and celery seed and give it a whisk. Add a couple of handfuls of shredded cabbage (I used packaged cole slaw mix) and stir well. Make it first so it has time to sit for a few.
Grilled Chipotle Steak and Onion Hoagie with Garlic Lime Mayo INGREDIENTS: - 1.5 lbs Sirloin Steak
- 12 oz beer
- 3 tsp chipotle puree, divided use
- Salt
- 1 large onion
- Olive oil
- 1/2 cup mayonaise
- Juice of 1/2 lime
- 1 clove garlic, grated
- Deli Hoagie Rolls
Mix together beer (I used Coors), 1 tbsp of chipotle puree (I puree a can of chipotle peppers in adobo sauce and keep it in the fridge, it lasts a really long time and is great in so many things), and 1/2 tsp salt. Add steak and marinate at least an hour, turning occasionally. Pat steaks dry and sprinkle with a little salt. Grill on a preheated grill (med. high heat), about 3-4 minutes per side. Let rest 5 minutes then cut in thin slices. Cut onion in thick slices (1/4 to 1/2 inch thick) and thread on skewers. If using wooden skewers, soak them in water for about 10 minutes to prevent burning. Drizzle onion with olive oil and sprinkle with salt and pepper on both sides. Grill with the steak until softened and some nice color develops (the more color the better). Slice hoagies in half and drizzle with olive oil and grill cut side down for a couple of minutes or until toasted. While steaks cook, mix mayo, 1 tsp of chipotle puree, juice of 1/2 lime, grated garlic clove and 1/2 tsp salt. Spread each side of hoagie liberally with sauce, add sliced steak and grilled onions. NOTE: I like to add either dill pickles or the lightly dressed cabbage I mentioned above.
