CORN SALAD


INGREDIENTS:

  • 2 c. fresh corn or 1 can drained
  • 1/2 onion, chopped small
  • 1/3 c. celery, chopped
  • 1/4 c. red or green pepper, chopped
  • 1 med. cucumber, chopped
  • 1/2 c. chopped tomato
  • 1/8 tsp celery seed
  • 1 tsp olive oil
  • 1/4 c. apple cider vinegar
  • 2 tsp. sugar
  • salt and pepper

Put corn, onion, celery, pepper, cucumber and tomatoes in a bowl. Whisk together celery seed, oil, vinegar, sugar, pinch of salt and pepper. Pour over veggy's and refrigerate. Can be served chilled or at room temperature.
