CLASSIC HUMMUS

Hummus is a Middle Eastern food thats made out of chickpeas. There are tons of recipes out there and most all of them are really easy to make. It's great as a dip or spread. I love eating it with "Roasted Oregano Pita Chips". This last time I made it I served it with the new "Popcorn Chips", the jalapeno ranch flavor. It was really good.
I found this recipe on one of my favorite blogs The Pioneer Woman. I really enjoy reading her blog. She is so funny, I consider her my new best friend. You should definitely check it out.
INGREDIENTS:
- 3 cans (14.5 Oz.) Garbanzo Beans, rinsed and drained
-
- 3 cloves garlic, chopped, or more to taste
- 1/2 whole lemon, juiced, I like more
- 1/2 teaspoons ground cumin, or more to taste
- Salt to taste
- Italian parsley
- 3 tablespoons To 5 tablespoons Cold Water
- 1 tablespoon Olive Oil
Combine chickpeas with all ingredients, except water and olive oil, in a blender or food processor.
Pulse until mixture becomes somewhat smooth and combined, but do not over mix.
Add water as necessary to facilitate blending. At the end, add olive oil and pulse no more than three times, just to incorporate.
Pour mixture into a bowl and stir to ensure mixture is combined. Serve immediately or refrigerate for up to three days in the fridge.
Just give this several tastes along the way and adjust according to what you like. I added more lemon, water and olive oil and think I added some pepper too. Delicious!!!
