BST SANDWICH with a CREAMY MAPLE BALSAMIC SPREAD


INGREDIENTS:

  • Thick sliced peppered bacon
  • Baby spinach
  • Sliced tomato
  • Sliced avocado
  • Wheat toast
  • Creamy Maple Balsamic Spread, recipe follows

Preheat oven to 400*.Cook bacon on a baking sheet with a rack for 20 minutes. Slice avacado and drizzle with lime juice to keep its color. Prepare remaining ingredients.

I like to cover the inside of both slices of toast with a layer of the maple balsamic spread and baby spinach then fill with 2-3 slices of bacon, avocado and tomato slices.

CREAMY MAPLE BALSAMIC SPREAD

  • 1 cup mayonnaise
  • 1 tbsp of pure maple syrup
  • 2-3 tsp good quality balsamic
  • 1 tbsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper

Stir together all ingredients and refrigerate until ready to use. This makes enough for 8-10 sandwiches
