BLUEBERRY MUFFINS
This recipe was given to me by my mom in the early 80's. It's a simple recipe and really easy. I love making them for breakfast right after I come in from picking a bunch of fresh berries. Yum!
INGREDIENTS:
- 2 1/2 c. flour
- 2 1/2 tsp. baking powder
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 2 c. fresh blueberries
- 1 tsp. lemon zest
- 1 c. milk
- 1 egg
- 1/4 c. oil
- 1 tsp. vanilla
TOPPING:
- 1/2 c. sugar (can use white or brown)
- 1 1/2 tsp. cinnamon
- 1 tsp nutmeg
Heat oven to 400*
Whisk together flour, powder, sugar and salt. Fold in blueberries. Mix together lemon zest, milk, egg, oil and vanilla.
Add wet mixture to dry and stir gently just until blended. Do not overmix. Sprinkle topping over muffins and bake 17-20 minutes. Makes 16 muffins.
